We couldn't be more excited to share our very first coffee from Vietnam. This remarkable lot from Zanya Coffee is more than a new origin for us—it's an opportunity to celebrate a changing narrative and introduce a coffee that challenges expectations of what Vietnamese specialty coffee can be. In the mist-covered Langbiang Mountains, that story begins with Marián, from Slovakia, and Lim, a member of Vietnam's K'Ho minority, who returned to Lim's childhood home with a vision to reveal the extraordinary potential of the region's Arabica coffees. For decades, Vietnam has been known for producing coffee at an incredible scale, supplying much of the world's Robusta. But beyond that familiar story lies a growing community of producers proving that Vietnam is equally capable of exceptional specialty coffee. Zanya Coffee is at the forefront of that specialty movement, working alongside neighboring farmers to elevate quality through meticulous processing, collaboration, and a deep commitment to their community. Zanya farm stands out as one of the best Arabica farms in Vietnam.
This coffee is as rare as it is remarkable. Only 60 30 kg bags of this lot were produced, and we feel incredibly fortunate to have secured 10 of those bags for our East and West Coast roasteries. It's a tiny production with an outsized story, and we're thrilled to be able to share it with you. Every lot reflects that care.
This lot underwent a double washed process, which is primarily used in Kenya, Burundi, and Rwanda. This method enhances clarity and brightness, resulting in an exceptionally clean-tasting profile. After depulping, the beans undergo a 36-hour water fermentation to break down the mucilage. Next, the coffee is washed and soaked in clean water for an additional 24 hours. By completely removing mucilage Zanya ensures a beautifully balanced clean cup that opens with inviting aromas of brown sugar and nougat. Notes of rhubarb, date, and toasted hazelnut are complemented by delicate hints of hibiscus, bright apple-like acidity, and a lingering honey sweetness, all carried by a smooth, medium body. We're honored to share this coffee and the story behind it. It represents craftsmanship, innovation, and the exciting future of Vietnamese specialty coffee—and we can't think of a better introduction to this incredible origin.
How to Brew It:
This coffee performs best using filter methods to allow the flavor expressions to shine, ideally at a 1:15 or 1:16 coffee to water ratio, with a brew temperature of 200-205 degrees.
