Grown in the beautiful highlands of Chiapas (1,300–1,600 masl), this blend of Bourbon, Typica, Marsellesa,
Oro Azteca, Márago, Caturra, and Peñasco varietals comes from smallholder farms working hard under shade in
rich volcanic soil. It’s fully washed and dried on patios or raised beds, depending on the farm’s setup.
The caffeine? Removed gently with the natural Ethyl Acetate (EA) process — using a sugarcane-derived
compound to keep all the flavor, none of the jitters.

How to Brew It:
This coffee should perform well however you prepare it - espresso, pourover, drip, french press, aeropress.
We'd recommend using a 1:15 coffee to water ratio for pourover, drip and french press, with your brew water
at 195-200 degrees F.
