At origin in Colombia, our friends at Cofinet fermented ripe coffee cherries with cinnamon, allowing the green beans to fully and naturally absorb the spice's essence, before finishing the post-harvest processing using the honey method. We combined this sensational coffee with our Brazilian Capim Seco beans, giving the blend a smooth, chocolate and classically nutty base, and named it for the cozy, celebratory feeling it inspires - it's your perfect companion for toasting all holiday season long. How to Brew It:
This coffee was developed for use on espresso, but should also perform well using filter or other immersion methods, using a 1:15 coffee to water ratio and a brew temperature of 197-203 degrees.
