We welcome back for the 4th year in a row a delicious cup from Finca Las Cortinas in Guatemala. The name Las Cortinas comes from a barrier of trees planted in the edge of the farm with the role of protecting the coffee from the strong breezes that blow on this part of the mountain. This particular coffee is Honey Processed (one of the few we offer each year) produced by Iris Gonzalez de Valladares & her sisters. This woman run farm consistently gets better and better every year because of their dedication to improving their approach to coffee farming & processing methods. For folks wondering what the the Honey process method is, it involves leaving a % of the sticky fruit mucilage intact on of the coffee seeds during processing. This impacts the coffees taste & offering unique and often rich undertones of syrup & molasses. A cup that has you craving more every time.
