This coffee, Small Stones, is just the english translation of “Las Piedritas” which is the name of this farm. It was produced in the very same area as our last offering, El Izotal, a 100% Pacamara Natural process. Both coffees share the varietal, Pacamara which is a cross between the big bean Maragogipe and Pacas, which is a selection of the Bourbon varietal. This coffee however, is a washed process which really allows the different processing methods to shine through. In contrast to the fruit forward, almost fermented flavor of El Izotal, Small Stones is balanced, toasty and chocolatey with sweet aromatics that jump out of the cup. A sweet vibrant cup with notes of peach, concord grape, and buttery a mouthfeel.
The farmers, Blanca Deras Arriaga and her family have achieved high praise for their coffee both in local coffee auctions as well as on the US coffee roasting stage. We’re proud to bring the Vigilante Familia, a complex yet classic Salvadorian high quality coffee. This coffee, like our other Salvadorian releases come from our partners at BioKrop. A direct trade export company that assists farmers in producing specialty coffee. Some of what Biokrop does to assist farms like Las Piedritas is working to improve the soil using microorganisms, compost and natural fertilizers with ancestral biodynamic practices. They also provide assistance prior and post-harvest to improve and innovate fermentation and drying processes.
