This delicious Ethiopian Natural processed
coffee comes to us from the Banko Gotiti cooperative in the southern region of Gedeb. The cooperative,
started in 2012, consists of around 600 members of smallholder, family-owned farms that have built a
reputation for producing some of the highest quality beans in Ethiopia. The heirloom varietal coffee
cherries in this lot were carefully hand-picked, and then dried on raised beds for 15 days before final
processing and removal of the dried fruit. The result is a classic natural Ethiopian cup: richly complex
and bursting with flavor, with heady floral and fruit aromas. We spent much of last fall searching for a
high quality Ethiopian Natural to bring to you all, and we’re excited to start 2023 with just
that!
How It Tastes:
A classic Ethiopian Natural, the heirloom varietals in this lot really
showcase the depths of flavor and aroma that this origin has to offer. Aromas of dark berries intermix
with more delicate notes of green tea and flowers when preparing, which unfold in the cup to reveal a
rich flavor tapestry: a mandala of sweet chocolate woven with ribbons of banana, peach, and berry, with
a complex, deep cherry fruit flavor reminiscent of a fine merlot at the center.
How to Brew It:
This coffee is great for pourover or french press using a 1:15 to 1:16 coffee
to water ratio, at a brew temperature of 200-205 degrees.
